Chicken Noodle Soup

Chicken Broth

Ingredients:

  • 1 - 2 packs Nomad Chicken Frames

  • 1 pack Nomad Chicken Necks

  • 1 pack Nomad Chicken Feet

  • 1-2 onions

  • 1-3 Celery Stalks (leaves attached)

  • 2-3 Carrots

  • Salt & Pepper

  • Apple Cider Vinegar (optional)

Steps:

  1. Roughly chop veg into large pieces (approx 4 × 4 cm)

  2. combine all ingredients in a large stock pot

  3. Cover with water

  4. Cook over a low heat for 6+ hours. I generally cook mine very low for up to 12 hours.

  5. Don’t be too fussy about time or ingredients. I generally use what veg I have in the fridge and cook it for as long as I can. I always prioritise organic and well grown ingredients to ensure maximum nutrient density.

  6. Once cooled a little, I jar up and freeze what I won’t use in the next few days. It is a important to strain the stock to remove all of the chicken bits. I Pour it into another pot through a strainer and cotton muslin cloth if I am being very fussy. Once cooled the broth will be like thick jelly, this is the gelatine from college in the bones and is so good for your gut health, bones and joints.

Chicken Noodle Soup

Ingredients:

  • Chicken broth

  • 1-2 stalks celery

  • 1-2 carrots

  • Chicken Breast skin removed cut into

  • Organic Ramen Noodles or the like

  • A good substitute to carrot and celery is adding peas and corn at the end

Steps

  1. Fry some finely chopped celery and in tallow or preferred oil or some broth, once softened

  2. Add chicken stock 1 litre or more depending on quantity to make

  3. Once veg soft through and boiling add noodles as packet instructions

  4. Add cut chicken breast and turn off heat after a minute or two

  5. Let sit to cook chicken breast, stirring through

  6. Serve with favourite condiments - ours are fresh coriander, soy sauce & Salt Gang Chilli Oil YUM!

We also do an ‘emergency’ version to throw at hungry kids which consists of broth, noodles and chicken if time (noodles cooked in broth is a great snack/meal).
